- 'Maxed' Out -

If you follow me on instagram...you probably have realized that I LOVE Maxis! Skirts or Dresses!





Did you know that the first maxi dress I ever bought or owned was last year around this time?!

Crazy...I know. Now I am obsessed.

Some of my fav places to buy maxis are Modern Vintage Boutique (they sell out of everyhting so quickly though), Uoi, La Posh, and Asos.

Chocolate Coconut Banana Pancakes



So as you guys may or may not know…we have been trying to eat healthy and clean!
I struggle with snacking at night so that is my current battle…that’s a whole ‘nother post tho…

I just feel so much better when I eat clean…no processed foods weighing me down.
Don’t get me wrong…when the weekend comes…it’s a little more tough to stick with that but we are trying!

I wanted to share with you guys some awesome CLEAN pancakes! And so easy to make!

I call them…

Chocolate Coconut Banana Pancakes

Ingredients (makes 4 small pancakes):
2/3 mashed banana (use left over for topping)
a scant 1/2 c oats
1/8 to 1/4 c shredded UNsweetened coconut(if you don’t like coconut…use oats)
1/4 c egg whites
1 BIG tbsp. applesauce (or greek yogurt)
1/2 tsp baking soda
1 tsp vanilla
1 tbsp cocoa powder (for the chocolate sauce)

Directions:
Mash banana and add all other ingredients…mixing well.
Pour 4 small pancakes onto griddle.
Believe they are small and you want them to be so it is easier to flip.
Cook on med-low. Prob about 3-4 minutes…maybe more? Then flip.
Be careful when flipping!

Mix your cocoa powder with water until a runny consistency and sweeten with your choice of sweetener…I think I used splenda that time.
Nutrition Info for all 4 pancakes (roughly):
350 cal, 50 g carbs, 15 g protein, 6 g fat



QUESTION:
Since I am having trouble snacking at night…what tricks do you guys use to keep from snacking???!!! I def want suggestions so I can try them out and report back if it worked!

HEALTHY Peach Cobbler...for two?



Yes! Until you add a scoop (or two) of vanilla ice cream.

Needless to say... The cobbler itself is actually healthy!

Now...it's not my mom's peach cobbler that's for sure...but this sure doesn't taste healthy and it's a good runner up if you're trying to eat a little healthier.-)

I think I gobbled this down in just a few seconds....







Ready for the deets? It's super easy :-)

This makes one for you and one for your peachy pie. (Or honey bun or sweet cheeks or Hott buns)

Healthy Peach Cobbler

 Ingredients (for two):
2 cups diced peaches (I used frozen)
6 tsp honey
2 tsp vanilla
3 tsp lemon juice
1 plain rice cake (broken into bits)
1/2 cup granola (I used Bear Naked Oats and Honey)
2 tbsp chopped or slivered almonds
2 tbsp nonfat greek yogurt

Directions:
Preheat oven to 350 degrees.
Spray two ramekins with Pam.

Place 1 cup of peaches in each ramekin and add 1.5 tsp lemon juice, 1/2 tsp vanilla and 2 tsp honey to each ramekin and stir.

In a separate bowl...mix together 1/2 cup granola, rice cake, and 2 tbsp almonds...plus 2 tsp honey, 1/2 tsp vanilla and 2 tbsp greek yogurt. Mix well then split this mixture onto the peaches in each ramekin.

Bake for about 35 minutes!
Add a little greek yogurt and honey on top instead of ice cream like we did!

Nutrition (use oatmeal instead of granola to make it even healthier!):
Calories - 250
Carbs - 55 g
Protein - 6 g
Fat - 3 g

Mom's Apple Cake Recipe

Hello!!

As promised...today I am giving you the best recipe EVER!!!!

My Mom's apple cake recipe.



This stuff is so yummy and perfect for any occasion.
It's also great for breakfast...warmed with a side of coffee!

This is a MUST try...I am not even kidding.
You will be addicted.

ok...now that I'm done drooling on my keyboard...here it is!

Mom's Apple Cake

Ingredients:
3 cups flour
1 ½ teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder

2 cups sugar
3 eggs
1 ½ cups vegetable oil
1 teaspoon vanilla extract

3 cups peeled & chopped Red Delicious apples (I used two very large)
1 ½ cups chopped pecans
Powdered Sugar to sprinkle on after baked

Directions:
Sift the flour, baking soda, salt, cinnamon and baking powder together in a medium bowl and set aside. Beat sugar and eggs in a mixer bowl until creamy. Add the oil and vanilla, beating until blended. Add the dry ingredients gradually and mix well. Stir in the apples and pecans.Spoon into a buttered bundt pan and bake at 300 degrees for 1 ½ hours. Cool in the pan on a wire rack. Invert onto a serving platter and sprinkle with powdered sugar.

Happy Monday ladies!
...oh...who am I kidding...
I am BUTT tired today y'all.

We hosted Easter lunch at our house yesterday and it was exhausting. Had a great time...just exhausting!

I kept my attire super casual and comfy since I was in the kitchen all morn. I forgot to wear my apron, so i ended up with powdered sugar all over me and my face at one point and splatters from various recipes!

Wearing Shirt from Express and maxi dress from Conversation Pieces. Also a red chloe vs tank bracelet!


I made homemade mac and cheese for the first time and it turned out great plus I made my mom's awesome apple cake! Hopefully I'll be able to post the recipe for you guys tomorrow!




I took chloe to the vet for her yearly exam and she was over the moon for her car ride!



I also had a little time to add some extra bracelets to the shop.
