Tastiest Stuffed Bell Peppers You Ever Did Have

Eric has told me that his co-workers will stop by his desk asking ‘what’s for lunch today’ because his food always smells so good! And today was no exception!

The day he brought these for lunch….the convo went something like this…

Via text
Me – Omg those stuffed peppers are AMAZING!
Eric – Can’t wait to try them!

A couple hours later…via text
Eric – OMG those stuff peppers are GROSS!
Me – Really? (as my heart sinks a little)
Eric – Bazinga!

Grrrrrrrrr…
I hate when recipes don’t pan out. I’ve had my fair share but lately…the recipes have been pretty darn awesome (if I do say so myself)! And these stuffed peppers were nothing short of awesomeness.

This recipe was super easy because you can mix all ingredients into one bowl and then stuff the peppers. Easy peasy (right? right.).

I originally found the recipe here…but of course I used ground turkey instead.





Ingredients
6 large bell peppers
1 lb 93/7 ground turkey (uncooked)
½ cup onion (diced)
1 14oz can diced tomatoes
1 cup rice (cooked) – we used brown rice
2 Tbs Worcestershire sauce
1 tsp salt
1 tsp pepper
1 ¼ cup shredded cheese (I used Mexican blend)
¼ cup water (to pour on bottom of crockpot)

Directions
1.  Cut off tops of peppers, scrape out insides and set aside.
2. Combine all ingredients together (except water) in a bowl.
3. Stuff peppers with meat mixture.
4. Pour water on bottom of crockpot and then place stuffed peppers in crockpot.
5. Cook on low for 6 hours or high for 4 hours. (or until peppers are tender and meat is cooked thru)

Macros for one bell pepper are as follows:
309 calories
22 protein, 22 carbs and 14 fat

11 TIPS to Living a Healthy Lifestyle!



Habits to a healthy lifestyle 

Living and eating healthy really is a lifestyle. Start small and set goals for yourself (and your family).
You must go into this knowing it will not happen overnight. This can get frustrating and result in giving up.

But if you start small….set small goals…these small goals will lead into big changes.


My 11 Tips…

- remember to drink plenty of water!

- get your significant other on board. If everyone in the household is willing to live a healthier lifestyle....it's so much easier to stick with it.

- plan your meals and snacksFail to Plan....Plan to Fail

- planning leads into prepping. Prep your meals 2 or 3 days in advance. This allows you to grab and go and you are less likely to make a trip to the vending machine!

- prepare TASTY meals and snacks. Eating healthy doesn't mean you have to eat bland chicken every day.Trust me....we've been there and done that and it's not fun. I honestly don’t think I can eat another chicken breast for the rest of my life!!!!

- remember it's a lifestyle.....not a diet

eat dessert! It's not gonna kill you. We usually splurge a little on the weekends. I would go crazy if I couldn't have dessert and pretty sure you feel the same way. My hubby may beg to differ and say that I'm already crazy!

don't starve yourself. This will only screw up your metabolism! Eat the correct portion size for your body and ask for help if you need it!

- eating a healthy breakfast sets the tone for the rest of the day

it's ok to fail. I've had my fair share of grabbing a donut (or two) from the break room or eating the entire box of goldfish while watching Joe Kenda on the ID Channel. It's going to happen but remember tomorrow is a new day. You'll have more good days than bad...trust me!

Fitness 101 - Easy Quesadillas

Sure why not.
 
You've got your protein, carbs, and veggies all in one. dip into some guacamole and there is your healthy fat! as long as you're not frying it in oil...you will be just fine!

HEALTHY Peach Cobbler...for two?



Yes! Until you add a scoop (or two) of vanilla ice cream.

Needless to say... The cobbler itself is actually healthy!

Now...it's not my mom's peach cobbler that's for sure...but this sure doesn't taste healthy and it's a good runner up if you're trying to eat a little healthier.-)

I think I gobbled this down in just a few seconds....







Ready for the deets? It's super easy :-)

This makes one for you and one for your peachy pie. (Or honey bun or sweet cheeks or Hott buns)

Healthy Peach Cobbler

 Ingredients (for two):
2 cups diced peaches (I used frozen)
6 tsp honey
2 tsp vanilla
3 tsp lemon juice
1 plain rice cake (broken into bits)
1/2 cup granola (I used Bear Naked Oats and Honey)
2 tbsp chopped or slivered almonds
2 tbsp nonfat greek yogurt

Directions:
Preheat oven to 350 degrees.
Spray two ramekins with Pam.

Place 1 cup of peaches in each ramekin and add 1.5 tsp lemon juice, 1/2 tsp vanilla and 2 tsp honey to each ramekin and stir.

In a separate bowl...mix together 1/2 cup granola, rice cake, and 2 tbsp almonds...plus 2 tsp honey, 1/2 tsp vanilla and 2 tbsp greek yogurt. Mix well then split this mixture onto the peaches in each ramekin.

Bake for about 35 minutes!
Add a little greek yogurt and honey on top instead of ice cream like we did!

Nutrition (use oatmeal instead of granola to make it even healthier!):
Calories - 250
Carbs - 55 g
Protein - 6 g
Fat - 3 g

Motivate Me Monday

Welcome back to Motivate Me Monday ladies!!




Last week I dared you to eat clean for the week...how did you do?!

I did great!

and made clean french toast a couple times too!

via instagram: CLEAN CHOCOLATE FRENCH TOAST for #breakfast y'all! I was just a little tired of eating eggs and toast every morn. I made this with egg whites, almond milk and cinnamon as your egg mixture. 2 slices of Ezekiel bread. 1/2 banana. PB2 peanut butter. And I didn't have any agave syrup :-( so I made a chocolate sauce with unsweetened cocoa powder, water and stevia sweetener. So good!!!!

Topped with unsweetened cocoa powdered mixed with water and stevia. #pb2 peanut butter. Raspberries and agave nector as my syrup! I devoured this I think in less than a minute lol!

via instagramWhat's for dinner...mexicano. A stir fry of chicken, bell peppers, Jalopenos, and mushrooms. Topped with organic guacamole wrapped in an organic corn tortilla.

See...eating clean doesn't have to be completely boring!

A lot of you ladies have been asking for a meal plan. I really don't have one and I have no clue how to make one but below is what I could be eating daily. Just make sure you're eating every three hours. I love my overnight oats. I don't even know if this is a balanced meal plan...so don't go quoting me on this!!!

I am not a nutritionist...this is just what I eat personally.



Have fun with it tho. I made one night into mexicano night. change out your eggs one morning for the clean french toast. Change out your chicken for some shrimp over a salad. Follow me on instagram and I'm sure you will find more recipes of what I'm eating. Motivate Me Monday...




Welcome back to Motivate Me Monday ladies!!

I have to say that I ate clean all week long last week and it felt great! I feel so much lighter.
However I ate pizza today and feel like blah right now...but back to eating clean again this week.

Did you know that I pretty much only cook twice a week?!?!

Prepare your meals!

That will keep you eating better for sure.

I prepare two days worth of meals every day. I cook a ton of chicken and what I don't use for the two days worth of meals...I freeze and use later in the week.

Meal planning and prepping helps keep me eating clean during the week...I don't run out of meals and head to the vending machine for a snack.

Eat 5 to 6 small meals a day...every three hours.

Here are a few of my meals from last week...if you follow me on Instagram...you've already seen these!



1/4 cup egg whites with sauteed veggies and Ezekial bread topped with hot sauce!

overnight oats with blueberries and strawberries

lots of butternut squash in my sauteed veggies!

lean ground turkey meat with sauteed veggies

so what does my grocery list look like?

egg whites
ezekial bread
organic corn tortillas for clean taco days!
tons of chicken, shrimp and ground turkey
almond butter or peanut butter
hot sauce
steel cut oats
almond milk
cottage cheese
vanilla greek yogurt
blueberries
raspberries
strawberries
bananas
avocados and organic guacamole
TONS of jalopenos
precut veggies for stir fry including:
kale
cabbage
squash
zucchini
red potatoes
bell peppers (green and colored)
mushrooms
onions
butternut squash

Motivate Me Monday...




It has been quite a few weeks since I've done a Motivate me Monday. I guess I haven't felt very motivated lately.

However this last week after eating so much crap...I feel like blah. 
Since I just started back at crossfit...I decided I will be eating clean! We already eat fairly good but I'm really taking it to the next step!

I am buying organic for sure! And not going to eat anything processed during the week. The weekends will be a little different and I wont be so strict. I would go crazy if i couldnt slack at least a little bit.

I have been stalking instagram with people who eat clean and they are such an inspiration!





Today..I am starting my day off with overnight oats.

Steel cut oats, almond milk, vanilla greek yogurt, strawberries, and a little cocoa and peanut butter.

breakfast is the most important part of the day for sure!! I made them into mini jars because I am eating every three hours as usual! 
Im sure by now there is a photo on instagram ;-)

This is the easiest breakfast ever so no excuses!

Motivate Me Monday



It's that time again!

Y'all I have to be honest...I feel gross.
Even tho I have been working out at the gym...I have not been eating the best and I can fell it.

I haven't done crossfit in a few months and I can tell my body has changed. It's not near as fit as it was.

so...I am starting back with crossfit next week.

Thank goodness.

Even though its hell sometimes...Id rather be beat up by barbells than feel like I'm feeling right now!

Motivate Me Monday!

Hey there!!!
so It's Monday and I am back with Motivate Me Monday!
 
 
 
 
Ok...so I got a lot of comments from you ladies regarding my arms while looking at photos of me in my wedding dress!
 
you can have awesome arms too!!
I promise!!
 
I created this vlog a while back with three different tyoes of push ups that will definitely tone your arms!
 
Also...I have been rowing a TON lately and I really believe this is helping as welll.

I promise...this is seriously such a great workout...works your whole body...even your butt and stomach! Just be sure to keep your tummy tight the whole time!

Motivate Me Monday - Rowing



Hi ladies!!



Rowing 
is my new fav type of cardio.

I leave the gym drippin' with sweat a I don't normally when I do the elliptical or the stair stepper.

I will be doing tons of cardio from now until the wedding! I went to the gym 6 times last week!

Just set your mind to it and you can do it!

Motivate Me Monday



Oh you guys...

For the past two Sundays I have worked out! Normally...I only go to the gym 2 or 3 days a week.

I feel like I've been eating 'not so healthy'.


This week I'm gonna work super hard! Plus...I need to be able to maintain my weight and size because my wedding dress fit perfect a couple weeks ago!

Motivate Me Monday

It's Monday Ladies!



You know how I touched up last week here on that I was 30 years old?!?!

Well...I am actually loving my 30s so far!
I have noticed such a change since I've been doing crossfit.

I feel like I haven't been in this good of shape in soooo long.

Why in the world did I let me 20's fly by barely working out?

Granted I only make it to a couple crossfits a week but that's better than nothing!

I have so much more confidence in my body when I work out and eat right.

So get off your butt ladies!!! And get movin' this week!
